Guest guest Posted February 28, 2003 Report Share Posted February 28, 2003 Vegetarian, Low-Fat Country Potato Patties 3 large potatoes, peeled or unpeeled, boiled till soft 2 tbsps. onion, finely chopped 2 tbsps. celery, finely chopped 2 tbsps. green bell pepper, finely chopped 2 tbsps. gf flour of choice 1 tbsp. minced fresh parsley Shred the poatoes in a food processor or with a grater. Combine with the remaining ingredients and shape into four patties. Cook on a nonstick griddle until browned on both sides, about 10 minutes.
