Guest guest Posted March 1, 2003 Report Share Posted March 1, 2003 CAROB ALMOND PUDDING 6 SERVINGS 1/3 cup raw slivered almonds toasted 3 cups plain rice or soy milk 3 1/2 T. arrowroot powder or cornstarch 4 T. unsweetened roasted carob powder 1/3 cup maple syrup 2 tea. almond extract 1/4 tea. salt Finely chop the toasted almonds and set them aside. lace 1/2 cup of the milk in a bowl and stir in the arrowroot or cornstarch until dissolved. set aside. In a saucepan, over med. heat, whisk tog. the rem. 2 1/2 cups of milk, carob powder, maple syrup, almond extract, and salt. heat to boiling, then restir the arrowroot solution and whisk it into the pan. bring the pudding back to a rapid simmer and cook no more than 1 min.
