Guest guest Posted February 19, 2003 Report Share Posted February 19, 2003 Carrots with Honey and Thyme 4 Tbs (60 ml) vegetable ghee (or CF margarine of choice) 2 shallots, finely chopped 4-6 large carrots, peeled and shredded 3 Tbs (45 ml) honey 1/2 tsp (2 ml) dried thyme, crushed Salt and freshly ground pepper to taste Heat the vegetable ghee in a skillet over moderate heat and saute the shallots until tender but not brown, about 5 minutes. Add the remaining ingredients, tossing to combine. Cover the skillet and cook for 5 minutes, stirring once or twice. Serves 4 to 6.
