Guest guest Posted February 14, 2003 Report Share Posted February 14, 2003 Sweet Dough (for open faced pies and tarts) Source: Still Going Against the Grain/Potts (adapted) 1/2 cup rice flour 1/2 cup bean flour pinch of salt 1 cup brown sugar 1 tsp. Xanthan gum 1/2 tsp. baking soda 1/4 cup applesauce 1/2 cup vegetable shortening Combine dry ingredients. Add shortening and blend until crumbly. Dissolve soda in applesauce and add to dry ingredients. Add more applesauce if dough is too stiff. Roll out on floured board and cut into strips. Place on top of an open-faced pie. This is a cookie- like crust and is best on a slightly tart pie. If you have any dough left, try cutting it into doughnut shapes and twisting the doughnut before baking briefly in a medium oven.
