Guest guest Posted February 14, 2003 Report Share Posted February 14, 2003 Some friends invited us to dinner and knew my DH wasn't able to eat gluten/wheat. DH was suprised to find an entire dinner, including dessert, that he could eat! For dessert our friend served a pudding- type pie in a nutty pie shell. It was really delicious! Here's what she did: ~ ground walnuts ~ add quinoa flakes (she used oatmeal, not knowing it was questionable; I've made this recipe since with quinoa); whirl in blender to make a course flour ~ oil to hold it together Blend all the ingredients together and press into a pie pan. Toast briefly in oven to hold everything together. This works well for open crust pies (try Mori-Nu tofu pudding mix in chocolate, vanilla, or lemon flavors).
