Guest guest Posted February 12, 2003 Report Share Posted February 12, 2003 Brown Basmati Lemon Rice Source: RecipeSource 1 cup brown basmati rice, raw 2 cups water Grated zest orf 1 lemon 1/4 tsp. nutmeg, ground 1/4 tsp. cloves, ground 1/2 tsp. cinnamon, ground 1/2 tsp. cumin, ground 1/2 tsp. coriander, ground pinch saffron, optional 1 Tbsp. chopped fresh parsley, for garnish Rinse the rice and soak it for 20 minutes in cold water. Add all the ingredients except for the parsley to a 2-quart pot. Bring to a boil, lower the heat, stir, and simmer, covered for 20 minutes or until the water is absorbed and the rice is cooked. Garnish with the chopped parsley.
