It makes a nice side dish. 2 cups millet 1 medium head cauliflower 4 cups water Salt to taste Toast millet in a skillet over medium heat, stirring constantly, until it begins to turn golden, pop, and becomes aromatic. Add millet to a large saucepan or pot. Add water, salt, and cauliflower, torn up into little pieces. Bring to a boil, cover, and simmer for 45 minutes.
