Guest guest Posted February 2, 2003 Report Share Posted February 2, 2003 Lemon Carrot Salad Source: Veg-R 1 pound carrots 1/2 lemon, finely grate rind and juice 1 tablespoon light brown sugar (or alternative) 2 tablespoons sunflower oil 1 teaspoon hazelnut or sesame oil 1 teaspoon chopped fresh oregano salt And pepper Finely grate the carrots and place in a bowl. Stir in the lemon rind and juice Add the sugar and oils and mix well. Add more lemon juice as necessary and season to taste. Sprinkle on the oregano and toss lightly. Chill for 1 hour before serving. Garnish with a spring of oregano if available.
