Thai Lemon Grass Soup

Source: Culinary DeLights/Blue Mountain TV

 

8 cups water

1 1/2 Tbsp. chicken-style seasoning

1 tsp. canola oil

1 Tbsp. Galanga powder (or to taste)

1 stalk lemon grass, cut in 1 " pieces

1/4 tsp. lemon juice

Juice of 2 limes

1 tsp. sugar

2 Tbsp. soy sauce

1 Tbsp. and 1 tsp. sweet soy sauce

1/4 tsp. hot red pepper flakes

 

Simmer for 20 minutes.

 

Add:

 

3/4 package firm tofu, in 1 " cubes

1/2 red bell pepper, sliced

1 - 10 oz. jar whole button mushrooms

1 small can baby corn

3 leaves napa cabbage

2 green onions

Several sprigs of cilantro, chopped

 

Serve immediately.
