Lunchtime Rice and Beans

In the morning just before you rush out the door for work, combine in a

plastic container:

 

1 cup (before cooking) of brown rice that you've cooked before. (This is a

great way to use leftover rice!)

1/2 medium can of Italian-spiced tomatoes

1/2 bunch parsley

1/2 small can brown beans (vegetarian version)

6-12 fresh mushrooms

 

When you're ready for lunch at the office, Mix and microwave for 3 minutes

at high.
