Sweet and Sour Tofu

Source: The Best of Silver Hills (A Canadian Cookbook that I LOVE!!!!!)

 

1 lb medium tofu

1/4 c soy sauce

1/4 c water

1/4 c cornstarch

1 recipe Sweet & Sour Sauce (to follow)

 

1. Rinse and drain tofu. Cut tofu into 1/2 " cubes.

2. In a small bowl, mix soy sauce, water and cornstarch.

3. Dip tofu cubes into soy sauce mixture making sure all sides are evenly

coated.

4. Place cubes in a non-stick or oiled fry pan over medium heat. Cook

until brown on all sides.

5. Put cubes in an oiled 8 " X 8 " casserole pan and pour Sweet and Sour Sauce

mixture over top.

 

Sweet & Sour Sauce

 

2 c pineapple juice

1/2 c Ketchup (recipe will follow)

2 T tomato paste

2 t soy sauce

1 T honey, or alternative

1 T lemon juice

2 T cornstarch

1/4 c cold water

salt to taste

 

1. In a small sauce pan, combine pineapple juice, Ketchup, tomato paste,

soy sauce, honey and lemon juice and bring to a boil.

2. Mix cornstarch in cold water and add to saucepan mixture, stirring

constantly until thickened. Remove from heat.

3. Serve hot with Sweet & Sour Tofu....also may put this whole mixture over

Stir fried vegetables or Fried rice....

 

Ketchup

 

4 c tomato juice

1 c honey, or alternative

1 cup lemon juice

1/8 t cayenne pepper

1/4 t cinnamon

1 t salt

 

1. Place tomato juice, honey and lemon juice in a medium saucepan. Add

seasonings and bring to a slow boil.

2. Simmer, uncovered, over low heat approximately 1 1/2 hour or until sauce

cooks down to about half the original amount.

3. Pour into jars and refrigerate.

4. When ready to use blend 1 cup of ketchup together with 1/4 c canned

tomato paste.

5. Chill and serve.
