Guest guest Posted January 13, 2003 Report Share Posted January 13, 2003 Carob Chunkies Source: Healthy Food Choices 1/2 cup carob powder 1/2 cup water 1 cup peanut butter 1 cup date butter 2/3 cup coarsely chopped walnuts or pecans 1/4 cup unsweetened coconut 1 tsp. vanilla Combine carob powder and water in a small saucepan and cook until thick, stirring constantly. Remove from heat and add remaining ingredients. Stir together well. Press evenly into 8 " x 8 " Pyrex dish. Refrigerate. Cut into 36 squares. Freeze for chewier fudge. *When substituting carob for cocoa, use an equal amount called for in a recipe. When substituting for chocolate, use three tablespoons of carob powder plus ont tablespoon of water for each square of chocolate. Since carob powder is 46% natural sugar, less sweetener should be used than when using cocoa or chocolate.
