Hi,

This diet is q.overwhelming, & my 7yr old boy is casein-free almost-

We are from south india.My Question regarding this is:

1)we use ghee(clarified butter)everyday in our cooking,i heard it's

casein-free, can anyone enlighten me on this, if you have personal

experience, all the more better.

2)If i have to go gluten-free, what oil should i use as my cooking

medium?

3)Are all lentils( & their flour) totally GF,do i check with the

manufacturer, if the manufacturing plant also produces products with

gluten-is this a problem at all. Pl help me.Thanks

Hello Meena

 

Welcome to the vegan and GF list. I am so glad to see you here. Some of my

favourite dishes are Indian. My children especially love pakore vegetables.

 

Let's see what I can do with your questions.

 

1. Ghee: ghee is controversial in the allergy world. Strictly speaking it is

butter fat with none of the proteins (casein, whey, etc.) remaining. It is not,

of course vegan as it is still derived from an animal product. Many people with

dairy allergies do use ghee without a problem. I prefer to use vegetable ghee

which is made from either canola or soy oils. I find it in the Indian section

of my local grocery (I am in Canada) and also at a local asian market.

 

2. none of the oils you would traditionally use in your cooking come from a

plant with the gluten protein in them. I use canola, corn, soy, peanut, and

many others. As far as I know, no oil is derived from wheat, barley, rye, spelt

or other gluten grains.

 

3. All dahl and lentils are gluten free. In fact, all beans are as well. If

they have been a staple of your diet, do not hesitate to continue to use them.

Many of us use chana (besan) and basjri flours as part of our GF cooking.
