Hi Amy, I'm finally getting a chance to send you the cranberry ice recipe. Mom got it from a magazine... not sure which one... Taste of HOme or one of it's " cousins " I think. We left out the whipping cream and it was more of an ice or sorbet and was very good. 4 C fresh or frozen cranberries 3 C water 1 1/8 t unflavored gelatin (we used a bit more emes) 1 C cold water 2 1/2 C sugar 1 C orange juice 1/4 C lemon juice in a large saucepan, bring cranberries and 3 C water to a boil. Reduce heat, cook uncovered, over medium heat until the berries pop. Remove from heat. In a bowl, sprinkle gelatin over cold water, let stand for 5 min. Meanwhile, strain berries through a food mill into a large bowl, discard seeds and skin. Add the sugar, orange juice, lemon juice and softened gelatin, stir until gelatin and sugar is dissolved. Stir in cream if used. Pour into a 13x9x2 pan, cover and freeze for 3-4 hours or until firm. You could just soften slightly and serve or do like we did... homogenize it with your Champion... was very good and comes out like soft serve. Enjoy!
