We had these tonight.. they were GREAT!! I did not have some

ingredients so I will tell you in () what I did differently.

 

Falafel Burgers

Yeilds 8 ( I got 5 1/2)

 

Adapted from Lighten Up! with Louise Hagler. These burgers, made from

cooked garbanzo beans rather than garbonzo bean flour, are easy to

digest. They can be pan fried or oven baked to make a lower fat version.

 

2 cloves garlic

2 cups cooked garbanzo beans OR one 15-ounce can, drained ( I used the can)

1/4 cup water or bean broth ( I used water)

1/2 tsp. salt ( sea salt)

1/4 tsp. black pepper

2 cups GF bread crumbs

1/2 cup minced onion

1/4 cup chopped parsley ( I did not have any, so I used thyme and vegit,

just sprinkled in till I tought it looked good)

 

1. Preheat oven to 350 F

2. In a food processor, mince the garlic. Add the garbonzo beans,

water, salt, and black pepper, add process until creamy. ( I used my

blender)

3. Transfer the mixture to a bowl. Stir in the bread crumbs, onion, and

parsley, and form into burgers. ( I had to really mix it good with my

hands to get it sticky)

4. Arrange the burgers on an oiled baking sheet and bake for about 15

minures on each side until browned. The burgers can also be pan fried

in olive oil until browned on each side. ( I baked mine)

 

Per burger: calories 101, total protien 4g, soy protein 0, fat 1g,

Carbohydrates 18g, Fiber 3g, Calcium 40mg, Sodium 195 mg.
