Golden Rice with Black Beans

I got this out of the Washington Post food section a while ago. Made it

tonight and it's super tasty. I put Crystal hot sauce in it because, well I

put it on everything :)

 

Golden Rice with Black Beans

 

2 T vegetable oil

3 c chopped sweet onions (like vidalia)

1 tsp ground tumeric

1 tsp ground cumin

11/2 tsp sat or to taste

1/2 tsp pepper

3 T butter (that's in the recipe - I used vegan stuff.)

2 c long grain rice

3 1/2 c veg broth or water (I used water)

15 1/2 oz can of black beans, drained and rinsed well.

2 T minced parsley or other herbs for garnish.

 

Heat the oil in a dep saucepan over low heat. Add the onions: cover and

cook until onions release their liquid and soften, but do not brown, 10 to

12 minutes. Increase the heat to medium and add the turmeric, cumin, salt,

pepper, butter(what you like) and cook stirring until everything is all

melted and mixed together. Add the broth or water, bring to a boil, then

reduce the heat to low, cover and cook for 20 minutes. The liquid should

be completely absorbed and the rice should be tender but not mushy. Add the

beans, taste and adjust seasoning. Garnish with parsley or other herbs and

serve.

 

I made the rice in the rice cooker separately and mixed it all in the pan

at then end when the spices were all blended, and I had added the black

beans to heat them up. Really tasty! Definitely needs the green stuff,

makes it very pretty and adds a nice flavor.
