Amy > Have you thought about making corn bread? I follow the Gluten-Free Gourmet cookbook recipe (orange cornbread) and use finely ground corn flour. First I make sure that my cast iron is well seasoned. If I cooked something that doesn't have a lot of fat/has dried out my skillet, I usually rub some veg oil on it first. If it's well seasoned already, I just heat the skillet on the stove (without adding much oil - if any at all). I wait for it to heat up - for it to start smoking or until the inside of the skillet becomes shiny (the heat forces the oil inside the cast iron to the surface - making it more non-stick). Then I pour the bread mix into the skillet (it starts to cook the bottom of the bread right away!! woohoo!) and then pop the skillet into the pre-heated oven for how ever long the recipe says.
