Dan: Cornbread Question

How do you make corn Bread in a cast iron skillet? I would love to know

how you do this.

I follow the Gluten-Free Gourmet cookbook recipe (orange cornbread)

 

 

and use finely ground corn flour. I make mine in a cast iron skillet and it

turns out great!

I'm not sure about technical terms us for descriptions or if all cast iron

reacts like mine does, but I'll try to explain how it works for me.

 

First I make sure that my cast iron is well seasoned. If I cooked something

that doesn't have a lot of fat/has dried out my skillet, I usually rub some veg

oil on it first. If it's well seasoned already, I just heat the skillet on the

stove (without adding much oil - if any at all). I wait for it to heat up - for

it to start smoking or until the inside of the skillet becomes shiny (the heat

forces the oil inside the cast iron to the surface - making it more non-stick).

Then I pour the bread mix into the skillet (it starts to cook the bottom of the

bread right away!! woohoo!) and then pop the skillet into the pre-heated oven

for how ever long the recipe says.

 

Does anyone have another way that works? I'm still new to cast iron. It's been

almost a year now and I LOVE it!
