Pineapple Cream Pie

Source: Vegetarian Cooking School Cookbook

 

1 c. nondairy milk

1 c. cashews

1/3 c.+ cornstarch

2/3 c. pure maple syrup

2 tsp. vanilla

1/2 tsp. salt

1 15oz. can crushed pineapple (juice also)

 

Whiz cashews and milk in blender until creamy. Then add the rest of the

ingredients. If you prefer pineapple pieces, do not add to blender. Heat

until thickened, stirring constantly with a whisk. Pour into pie shell and

chill.

 

Crust for pineapple pie:

1 1/2 c. toasted coconut

2 c. almonds or pecans, ground

1/3 c. maple syrup

 

Combine ingredients and press into a 10 " pie plate and chill.

 

My family loved this pie! This crust tasted like macaroon cookies.
