Lima Bean Creole

Source: Cooking with Natural Foods II

 

3 cups cooked lima beans

 

Add:

 

2 Tbsp. green pepper, chopped

2 Tbsp. onion, grated

1 tsp. salt, if needed

 

Stir in:

 

1 cup tomato juice

1/2 cup tomato paste

1 Tbsp. flour (gluten free if necessary such as garbanzo flour)

 

Place in casserole and bake in 350 degree oven for 30 - 45 minutes or until hot

and bubbly.
