Millet Balls Gourmet

Source: Cooking with Natural Foods II

 

Soak 2/3 cup raw soybeans overnight in about 3 cups water. Drain soaked

soybeans and whiz in blender:

 

2 cups soaked soybeans

1/2 cup water

1 medium onion

 

Combine above mixture with:

 

1 1/2 cups cooked millet

1/2 cup slivered almonds

1/4 cup sunflower seeds

1 cup seasoned bread crumbs (gluten free if necessary)

1/2 tsp. salt

 

Let stand 5 - 10 minutes, form into balls. Roll in 1/2 cup seasoned crumbs.

Bake on lightly greased cookie sheet or line pan with liner paper. Bake at 350

degrees F. for 40 minutes. Serve with tomato sauce if desired.

 

Cook millet by steaming 1/2 cup millet in 2 cups water and 1/2 tsp. salt until

soft, approximately 45 minutes.
