Guest guest Posted December 3, 2002 Report Share Posted December 3, 2002 Mushrooms Stuffed with Cream Cheese Source: Cooking with the Benton Sister's Vol. II Large mushrooms 2/3 cup cashews 1 1/2 tsp. salt 1 1/2 Tbsp. sesame seed 1/2 tsp. onion powder 1/2 tsp. garlic powder 1/4 cup lemon juice 4 Tbsp. cornstarch 1 cup water 1 1/2 cups coconut milk or non-dairy milk 1 can olives, chopped (optional) Wash and stem mushrooms. Place on a cookie sheet and bake at 350 degrees fro 10 - 15 minutes, or until mushrooms are tender. While mushrooms are baking, make the cream cheese. Cream Cheese: Blend all ingreidnets together until smooth, except mushrooms and olives. Add olives while thickening on stove. When mushrroms are finished baking, drain. Fill them with cream cheese through a cake decorator, or you may fill mushrroms by using a spoon.
