Patties with Deluxe Creamed Gravy

Source: Cooking with the Benton Sister's Vol. II

 

1 cup water

2/3 cup cashews

1 whole onion, minced

1 1/4 cups walnuts, ground

4 cups quick oats (or quinoa, cooked whole grains or flakes)

1/4 cup Bragg's liquid aminos

4 tsp. McKay's chicken-style seasoning

 

Deluxe Cream Gravy:

 

4 cups water

3/4 cup cashews

1 1/2 tsp. salt

2 Tbsp. McKay's chicken-style seasoning

3 Tbsp. cornstarch

1 can olives, minced

1 whole onion, minced

1 1/2 cup peas

1 (2 lb.) tub firm tofu, cubed

 

Blend cashews and water, minced onion, and ground walnuts, then mix all

ingredients together. Spray cookie sheet. Using an ice cream scoop, put all

patties on cookie sheet, as balls from scoop, and bake in oven for 10 minutes,

then using a pancake turner, flatten all mixutre balls into patties. Bake at

350 degrees for 20 - 25 more minutes. When through baking, arrange in baking

dish overlapping slightly and leave until gravy is ready.

 

Deluxe Creamed Gravy: Blend first 5 ingredients with 1 cup of the water until

smooth. Then add remaining water. Thicken on stove with minced onion. When

almost thick, add peas, tofu cubes and olives. When completely thick, pour over

patties. Another recipe perfect for making ahead of time so you don't have to

cook when company is present.
