I had a nice time with my family, and the food was delicious. Of course, I had to make all of my own food, because nobody knows how to cook for me, but that is fine, because I love to cook Plus, I love introducing new foods to people. Here is what I ate that day: Wild rice pilaf w/ lentils, walnuts, celery and cranberries Spicy sweet potato bake (By Amy, thanks for the recipe, this dish was lovely!) Mashed yukon gold potatoes, turnips and parsnips, w/ green onion french green beans with lemon-dill seasoning Sauteed brussels sprouts w/ miso-tahini-mustard sauce Pecan pie (recipe compliments of LaDonna. Thank you so much for this recipe! The pie turned out fabulous, and was the best pecan pie I've ever had, vegan or otherwise Pumpkin pie (I think this recipe was supplied by LaDonna as well; it was the one made with cashews and dates. Absolutely wonderful, one of the best I've tasted.) For the pie crust, I used the recipe from " Special Diet Solution " by Carol Fenster. The crust turned out very nice, I couldn't tell the difference between it and a " regular " pie crust. Nicely browned and very flaky. Everyone at our table loved all of my dishes I had brought to share, and this is truly the reward I get from cooking, to bring happiness to others (and myself, of course!) through my creativity in the kitchen.
