I felt like I was eating bread with gluten!!! I wonder how they get millet to work like that??? I bought 50 pounds of millet so that I could start playing with it, but after several hours in the kitchen I'm convinced there is some very unique technique or equipment used to make that bread! The only ingredients in most of their breads are: millet flour, brown rice flour, water, sea salt and baking powder. Anybody want to brainstorm with me? Has anybody been to their bakery and seen what they do? I get frustrated when 1 very small company is making such a wonderful product and it's so hard to get a hold of. I bought $60 worth of bread from them and paid $60! shipping. It's great, but let's face it, most of us can't afford it. Anybody have any ideas how those ingredients could work together to make such a light and wonderful bread? Thanks for any input!
