Guest guest Posted November 25, 2002 Report Share Posted November 25, 2002 Hi, This recipe for Rice Banana Bread was on the back of a packet of Brown Rice Flour that I got last week. I'm going to make it for my Dad this weekend. Suggestions on what to use for replacing the egg would be greatly appreciated. Rice Banana Bread 2 cups brown rice flour 1 tsp salt 4 tsp baking powder 1/2 cup butter (I'm going to use vegan margarine) 1/2 cup mashed banana 4 tbs honey (or other sweet syrup) 2 eggs (replacement suggestions?) 1/2 cup soy grits - Sift together flour, salt and baking powder. - In a separate bowl, cream butter banana and honey. Whilst continuing to stir, add eggs, dry ingredients and soy grits to mixture until blended. - Spoon mixture into a small non-stick bread tin. - Bake for 30 mins at 180 degrees C or until golden brown.
