I'm going to make it for my Dad this weekend. Suggestions on what to use for replacing the egg would be greatly appreciated. Rice Banana Bread 2 cups brown rice flour 1 tsp salt 4 tsp baking powder 1/2 cup butter (I'm going to use vegan margarine) 1/2 cup mashed banana 4 tbs honey (or other sweet syrup) 2 eggs (replacement suggestions?) 1/2 cup soy grits - Sift together flour, salt and baking powder. - In a separate bowl, cream butter banana and honey. Whilst continuing to stir, add eggs, dry ingredients and soy grits to mixture until blended. - Spoon mixture into a small non-stick bread tin. - Bake for 30 mins at 180 degrees C or until golden brown. Oats aren't gluten-free, though there is some discussion about this among celiacs. I'm guessing that the reason for the grits is to give it a crunchier flavor. Bob's Red Mill makes a gluten-free cereal with corn, sorghum and something else in it that I can't remember that would be a good sub. You might also try poha flakes. Another idea would be amaranth or quinoa. Both are smaller grains. Millet, perhaps? Just throwing out some suggestions. It might be something you would want to try out and see. And the flaxseed gel would probably work great to replace the eggs in the recipe. I, personally, would leave the seeds in to add some extra fibre. Guest guest Posted November 25, 2002 Report Share Posted November 25, 2002 i know what you mean about the discussion on oats , my mom's a celiac and she told me now, that the organic rolled oats can be used for celiacs. she's full blown celiac, already went through the colon cancer too because of it, and doesn't have any trouble with organic oats. the slightest hint of wheat and her body tells her . guess that's good enough for us.
