Bread! Finally!

Two weeks in a row, a recipe worked, so I thought I'd share it. It probably

has as much nutritional value as white wheat bread, but it's something! I

made two loaves today, one with McCanns? Irish Oats, and the other with a gf

mix described here before (thanks!).

 

1 cup corn starch to half cup brown rice flour to half cup potato starch

flour to 2 tsp xanthan gum.

Dh likes the oats one best, but I like the other. He said the latter tastes

like cake. Hmmm....

 

Herb Oat bread

 

this week, I omitted the herbs (and baking soda cuz i'm out) to have plain

white bread

 

1 1/4 cups rolled oats (irish, or use gf flour)

1 1/4 cups gf flour

1/2 tsp baking soda

2 tsp baking powder

3/4 tsp salt

1/2 tsp each dried: basil, oregano, dill

1/8 tsp dried rosemary

1/4 cup sugar/sweetener

1 1/4 cups milk or yogurt (rice or soy, too)

2 large eggs (or equiv.), beaten

1/4 cup veg. oil

 

Preheat oven to 375 degrees F. Grease and flour loaf pan. Process oats (if

used) until powdery. Combine dry ingredients. Add liquid ingred. Stir just u

ntil evenly moistened. (Should be thicker than thinner. If too thin, add

another 1/8 to 1/4 flour.) Pour into loaf pan. Bake 40-45 min, until inserted

knife comes out clean. Cool 10 min, then remove from pan and cool on rack.

 

OR bake 25 min in 3 5x3x2 inch loaf pans.

 

I freeze this in slices, because quick breads w/o yeast go stale quickly.

This was great for grilled cheese, dh liked it. Ds liked it fresh from the

oven with margarine, no crusts, please. :)
