Guest guest Posted November 24, 2002 Report Share Posted November 24, 2002 Raw Pumpkin Pie Source: Mimi on the Internet RAW PIE CRUST RECIPE 1 cup walnuts 2 cups soaked almonds 10-15 dates 2 tsp. orange juice Process all nuts in a food processor or a Champion juicer with no plate on. Add dates and keep homogenizing for a while if using a food processor. If using a Champion, process the dates and mix with ground nuts by hand. Add orange juice to homogenize even better. Spread into a pie pan (glass preferable) evenly to form a crust and immediately set aside in the freezer. --- RAW PUMPKIN PIE (Use crust above) Pumpkin filling: 1 1/2 - 2 cups raw pumpkin 1 cup almonds 1/2 cup coconut 2 - 4 tbs fresh lemon or orange juice 2 tbs raw, unfiltered honey 1/2 cup organic raisins, soaked 1/2 tsp ginger 1 tsp cinnamon 1/4 tsp nutmeg In a blender combine the pumpkin, almonds, juice and honey. Add coconut, raisins and spices. If too thin add more almonds. The pie will firm up some when chilled, but the consistency should be that of pancake batter. Pour pie into pie crust.
