Raw Nut Ice Cream

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups soy milk

1 cup almonds

1 cup pecans

1/2 cup sunflower seed kernels

1/2 cup sesame seeds

1/4 cup flax seeds

1/2 cup honey

1/4 cup oil

1 teaspoon vanilla

 

Mix all the ingredients together and blend in an electric blender in batches

until smooth. Pour into ice cube trays and freeze until solid.

 

Yield: six to eight servings.

The recipe doesn't say, Tracy, but I think I would allow the frozen

cubes to melt abit and then take a fork to them and gently soften the

cubes up abit. . .
