Guest guest
PILGRIM's PUMPKIN PIE Previously posted to CVC by Wendy/Peace and Carrots Farm *There's no pumpkin in this recipe. . .I'm not " clear " on the instructions. I assume that parts 1 and 2 are for the crust and the parts 3 and 4 are four the filling. Any ideas? ~ LaDonna 1. Prepare nut crust: Blend together 1/4-cup cold pressed oil 1/4 cup maple syrup 1/4 cup peanut butter (or other nut butter) 2. Stir in: 1 cup ground nuts 1 cup okara or rolled oats or quionoa/flakes 1 cup coconut 3. Add and whiz 1 cup soft tofu 3 eggs replacement equivalent 1/2 cup maple syrup 4. Pour into large bowl and stir in 1/4 cups sultanas 2 t powdered ginger 1 t mixed spice 1 T cinnamon 1 t nutmeg 1/2 t ground cloves Pour into unbaked pie crust. Bake at 180C / 350 F for 60 minutes or until knife inserted in centre comes out clean - cover crust with foil part way through baking time to prevent burning. Cool to room temperature.
