Guest guest Posted November 22, 2002 Report Share Posted November 22, 2002 Benton Sister's Pumpkin Pie Source: Benton's Sister's Cookbook #3 2/3 cup liquid sweetener 2 1/2 cups Libby's canned pumpkin 1 1/2 cups coconut milk (reduced fat okay) 2 tsp. vanilla 3/4 tsp. salt 1 tsp. coriander 3/4 tsp. cardamon 3/8 tsp. sassafras 1 tsp. butter flavored extract (vegan) 4 Tbsp. cornstarch Combine all ingredients in a pan and thicken on the stove. Place in a bowl and let set up in the refrigerator, then whip, and pour into a prepared pie pan. Top with tofu whipped cream and enjoy!
