Light Pumpkin Pie

Ingredients in Blender:

 

16 oz pkg of med tofu

2 cups pureed pumpkin or carrots

1 tsp cinnamon

1 cup brown sugar or Sucanat

1/4 tsp nutmeg

1/4 tsp ginger

1/4 tsp cloves

2 T flour (gf alternative okay/tapioca flour)

 

Blend until very smooth and place in a 9 " unbaked pie shell. Bake at 425 for

15 mins; reduce heat to 350 and bake for 30-40 minutes.
