Guest guest Posted November 22, 2002 Report Share Posted November 22, 2002 Carrot-Tofu Quiche 4 cups carrots, sliced 2 cups tofu, mashed 1/4 cup apple juice 1 small onion, minced 1 clove of garlic minced 2 Tbsp. parsley 1 pie shell (gf if necessary) 1/4 cup dry bread crumbs (gf if necessary) Cook carrots until tender. Blend the tofu apple juice and spices together. You should have a nice thick and creamy mix like pudding. Add more juice if too thick. Add the onions and carrots and mix well. Spread the mixture into a greased 9 X 9 inch square casserole dish. Bake at 350 degrees for 25 minutes. Remove from oven and sprinkle bread crumbs over the top. Continue to cook until set, about anouther 10 minutes.
