Carrot-Tofu Quiche

 

4 cups carrots, sliced

2 cups tofu, mashed

1/4 cup apple juice

1 small onion, minced

1 clove of garlic minced

2 Tbsp. parsley

1 pie shell (gf if necessary)

1/4 cup dry bread crumbs (gf if necessary)

 

Cook carrots until tender. Blend the tofu apple juice and spices together.

You should have a nice thick and creamy mix like pudding. Add more juice if

too thick. Add the onions and carrots and mix well. Spread the mixture

into a greased 9 X 9 inch square casserole dish. Bake at 350 degrees for 25

minutes. Remove from oven and sprinkle bread crumbs over the top. Continue

to cook until set, about anouther 10 minutes. Serve with a side salad and

raw veggie slice.
