Guest guest Posted November 20, 2002 Report Share Posted November 20, 2002 Holiday Avocado Stuffing Source: Avocado Information Bureau (adapted to vegan/gf) 2 tablespoons, vegan margarine 3/4 cup, chopped onion 3/4 cup, chopped celery 1/2 cup, chopped red bell pepper 1/4 cup, chopped pecans or walnuts - toasted 2 tablespoons, chopped parsley leaves 6 oz. dried bread crumbs (gf if necessary) water (enough to moisten) 2 firm ripe avocados - seeded, peeled and cubed optional: herbs to taste/rosemary, thyme, garlic powder, etc. In skillet margarine butter over medium heat. Add onion, celery, bell pepper and parsley; saute' for 4 minutes stirring occasionally. Stir in pecans, stuffing mix, water and avocado. Grease a 1-quart casserole and spoon in stuffing. Bake in preheated 350° F oven for 20 to 25 minutes until top is lightly browned and stuffing is heated through.
