Thank you for this recipe! I made pumpkin cake yesterday and thought I

added enough cocoa to give it a cocoa flavor. But I didn't. I am making

this right now. I used honey and a tad bit of maple syrup instead of the

apple juice concentrate. I don't buy it.

 

What about agave nectar? Does anyone here use it?

Hi Susie,

 

I think agave nectar would be great in this recipe. I haven't tried it yet,

as it isn't readily available where I live. But if you have a source, go

for it! Do others here use it? What can you tell us about it? I usually

use maple syrup for sweetener in things I bake. I've found that it can

usually be substituted equally for any type of sweetener in a recipe (I do

not usually adjust dry/liquid ingredients and haven't had any problems).

 

Your pumpkin cake sounds delicious!!! I wish I could stop by and have a

cuppa herbal tea and cake with you!
