Almond Icing

Source: Cooking with Natural Foods II

 

Makes 2 cups

 

Blend thoroughly:

 

1 cup coconut

1 cup water

2 dried pineapple rings

 

Add:

 

2/3 cup cooked millet (soft)

1 tsp. almond extract

 

Blend until smooth. Add more water if necessary for icing consistency.

 

Serve on rolls, fruit salad, fruits, or desserts
