Guest guest Posted November 19, 2002 Report Share Posted November 19, 2002 Holiday Squash Source: www.hugs.org (adapted to vegan) 3/4 cup flour (gf alternative if necessary) 3/4 cup packed brown sugar (or date sugar) 1 tsp. ground allspice 1/4 tsp. salt 1/2 cup vegan margarine 1 butternut squash; peeled, cut into 1/2 " sliced, seeds removed 1 cup chopped pecans 1 cup maple syrup Preheat oven to 350°. Grease a 11 " x7 " x2 " baking dish. Mix flour, brown sugar, allspice and salt. Cut in margarine to make crumbs. Arrange 1/3 of the squash in the baking dish; sprinkle with 3/4 cup crumbs. Top with remaining squash; sprinkle with remaining crumbs. Top with pecans and drizzle with maple syrup. Cover with foil; bake 1 hour. Remove foil; bake until squash is done, about 10 minutes.
