Crust Recipe

(good for making a rolled main dish with savory filling inside)

 

Source: Cooking with Natural Foods II/Black Hills Health and Educ. Center

(adapted)

 

1 1/2 cups cashew nuts

3 cups hot water

1 tsp. salt

4 Tbsp. date sugar or 3 dates

 

Blend until smooth. Then add:

 

2 Tbsp. yeast

6 cups whole grain flour (use gf flour if necessary; may wish to add Xanthan

gum or Guar Gum)

 

Mix dough, kneading lightly. Roll out dough. Put filling down the center

and fold dough over, squeezing dough to make a seam (or use for tarts,

cutting dough into circles). Bake at 350 degrees until done or golden

brown. Suggested filling --- a stuffing or savory rice pilaf.
