Center 3 cups cooked rice 1/2 cup diced cucumber 1/2 cup chopped green pepper 2 Tbsp. thinly sliced green onions 1/4 cup diced pimiento 1/2 cup green onion or tofu mayonnaise Combine rice with vegetables. Toss lightly but thoroughly with dressing. Spoon mixture into a pretty glass bowl and chill until served.
