Guest guest Posted November 12, 2002 Report Share Posted November 12, 2002 Apple Filled Sweet Potatoes 2 small sweet potatoes or yams 1 Golden Delicious apple, peeled, cored, chopped 5 Tbsp. frozen apple juice concentrate, thawed 1/2 tsp. ground cinnamon 1/8 tsp. ground nutmeg 1. Preheat oven to 400*. 2. Pierce potatoes with fork. Bake 1 hr. or until tender. Remove from oven; let stand 10 min. or until cool enough to handle. Cut potatoes lengthwise in half. Scoop out pulp leaving 1/4-inch thick shells; reserve pulp. 3. Place apple in microwavable dish; cover with plastic wrap. Microwave at high 90 seconds. let stand 10 min. 4. Preheat broiler. Combine reserved potato pulp, apple juice concentrate, cinnamon and nutmeg in small bowl until well blended. Add apple; toss to coat. Stuff potato halves evenly with apple mixture. Plave halves on baking sheet. Broil 5 min. or until tops are lightly browned.
