Inflated Bean Tortillas

These infladas from Carmen Ramirez Degollado of El Bajio Restaurant are made

with tortillas formed from a mixture of corn tortillas masa and refried

beans which are then deep-fried until they " inflate " . The dish is a

specialty of the port of Veracruz, where it is eaten with café lechero.

 

The infladas must be eaten immediately.

 

5 oz Frijoles Refritos (refried beans); quite dry

1 lb prepared tortilla masa (dough for corn tortillas)

1 qt vegetable oil

Red chiles, for garnish

Salt to taste

 

Process the Frijoles Refritos in a food processor until

they are completely smooth.

 

Place in a bowl with the tortilla masa and salt to taste,

and process the mixture together with a spoon until the

dough is uniform in color and texture.

 

Press the mixture into tortillas one at a time, and fry

as follows:

 

Heat the oil in a large pot over high heat.

 

Put one tortilla into the pot, spooning it with hot oil

to bathe it well, until it inflates.

 

Remove it from the pot and drain on paper towels to

remove any excess oil.

 

Repeat with the remaining tortillas, one at a time.

 

Serve immediately with Salsa Negra and garnish with

chiles, if desired.

 

 

Makes about 20/Allow at least 2 per person
