Of course that tradition must change, as we now have to deal with the gluten issue. I've been working on finding a gluten- free and vegan alternative to " turkey " . . .wanting something festive and " more than a casserole " . The holiday edition of Veggie Life magazine has some great ideas and one is vegan and easily adapted to gluten free. The idea is to blend extra firm tofu, arrowroot, agar powder, and seasonings in food processor. It makes a thick blend that you pour onto a sheet of plastic wrap. Then you form your stuffing (I will use either cornbread or wild rice stuffing, or a combo) into a log and place it into the center of the tofu mixture. The tofu is then wrapped around the stuffing, keeping the plastic wrap in place and tying the ends with string. You bake the entire loaf this way and when it is done eliminate the plastic wrap and slice the loaf into circles with the stuffing inside. Serve with gravy and you're all set! The only thing I'm wondering about is baking the plastic wrap. The magazine says it won't hurt you " once in awhile " , but I'm not sure I like that idea. I'm trying to come up with something else.
