Guest guest Posted November 11, 2002 Report Share Posted November 11, 2002 Raised Sweet Buns Source: still going against the Grain 1 cup mashed potatoes 1 cup sugar 1/4 tsp. salt 1 1/4 cups water ( include the potato water) 1/3 cup margarine 2 tsp yeast 1 3/4 cups rice flour 1 3/4 cup millet or bean flour 1/2 cup arrow root or tapioca 4 tsp. Xanthan Gum Combine potatoes, sugar, salt and margarine Dissolve the yeast in the water Add to Potato mixture Combine the flours and Xanthan gum and add to the potato mixture Knead the dough on a floured board adding more flour if the dough is still sticky. Place in well, greaded bowl and cover Let Rise until about double its bulk, ( over night is fine) WHen risend, place back on floured board and pat down to 1 inch in thickness Cut into " 1 inch rounds " the old recipe says, but a regular biscuit cutter is fine also Let rise for about 40 minures or until dough mesures about 1 1/2' in height Sprinkle the tops with granulated sugar Place on well-greased baking sheet Bake at 350 for about 30 minutes or until browned.
