Muffin Mix

Source: Still going against the grain

 

 

 

8 cups rice flour

4 tbs. Baking powder

2 cups sugar

2 tsp. Salt

 

Combine all ingredients

 

Store in an airtight container, preferably in the refrigerator or freezer.

 

 

Using mix:

 

For MJs Orange Muffins

 

1/4 cup oil

2 eggs replaced

1/4 cup orange juice concentrate

1 cup water

2 1/2 cup muffin mix

 

mix the first 4 ingredients

add the muffin mix, stir wll

pour immediately into greased muffin tins

bake at 350 for 15-20 mins

Poppy Seed Muffins

 

1/4 cup oil

2 eggs replaced

1/4 cup orange juice concentrate

1/2 tsp. grated orange peel

2 1/2 cup muffin mix

1/4 tsp ground nutmeg

1 cup water

1/2 cup golden raisins

1/2 cup chopped pecans

6 tbls. poppy seeds

 

Mix the first 5 ingredients

Add muffin mix and stir.

Add rest of the ingredients and stir quickly until well mixed

Pour Immediately into greased muffin tins

Bake at 350 for 20-25 minutes
