making soy cream cheese

Would love to, but it is not available where I live in Canada so that's why I

was looking into making my own. The brand we have has casein in it for

" flavour " .

Hi, All,

 

In response to making soy cream cheese, have you all tried the Tofutti

Better Than Cream Cheese? It is dairy and gluten free, and it is

wonderful. It's available at Wild Harvest (in Shaw's in New England)

and at some HFS. My 3 year old gluten free dude loves it on celery. I

know I always tend to offer a commercial product for a homemade one, but

anything to make my life easier is always appreciated in my house!

 

OK, so now for something homemade:

 

MUNCHKINS!

 

In large bowl combine:

1-1/2 cups GF flour (I find Bob's Red Mill All Purpose GF Flour is the

BEST)

1/3 cup sugar

1/2 tsp. salt

1/2 tsp. cinnamon

1-1/2 tsp. xanthan gum

2 tsp. Featherweight baking powder (or equiv. GF)

 

In small bowl combine:

1 egg slightly beaten

1/2 cup Milk Sub

2 Tbl. oil

1/2 tsp. vanilla

 

Add wet ingredients to dry and stir with a fork just until moist. WET

HANDS and roll into small balls (about 1-1/2 inch) and WET SLOTTED SPOON

and drop balls into Fry Daddy (or hot oil, but small Fry Daddy works

MUCH better - they are $18 at WalMart). Fry about 3 or 4 minutes, until

browned and cooked through. Remove with slotted spoon to paper towel.

 

Mix in a ZipLoc bag 1/2 cup sugar and 1 tsp. cinnamon. Drop warm (NOT

hot! I melted the bag once!) munchkins iinto sugar mixture, shake like

heck, and give to your kids. Be sure to make enough so you can have

them too - they rule!

 

Hot oil on the stove will yield a delicious but slightly malformed

munchkin. The Fry Daddy will yield a munchkin worthy of Dunkin' Donuts,

and they turn all on their own in there so they cook evenly. Plus, no

wasted oil.

 

We made munchkins this a.m., and we made enough so we can bring a few to

church for my GF son tomorrow (they always serve munchkins for kids at

coffee hour), and we'll use the stored oil for GF sweet potato fries

tonight. Talk about convenient! (No, I promise I do not work for Fry

Daddy!)
