Guest guest Posted November 4, 2002 Report Share Posted November 4, 2002 Parslied Noodles Amandine Source: Woman's World 11/12/02 1/4 cup sliced natural almonds 12 oz. extra-wide noodles (try soba or another whole grain type) 1 cup frozen peas (or fresh) 3 Tbsp. vegan margarine (may use less or omit; or substitute olive oil) 1/4 cup chopped fresh parsley 1/2 tsp. salt Preheat oven to 325º. Spread almonds on baking sheet. Bake until lightly browned, 4-5 minutes; cool. Cook noodles according to package directions, adding peas during last 2 minutes of cooking time. Drain. In same pot melt vegan margarine over low heat. Stir in noodle and pea mixture, parsley and margarine; remove from heat. Stir until combined. Transfer to bowl; sprinkle with almonds.
