Guest guest Posted November 4, 2002 Report Share Posted November 4, 2002 Rice Granola Source: Vegan Delights 2 cups cold, cooked brown rice 2 cups rice bran (stablizied is best) 1 cup ground nuts or sunflower seeds 1/2 cup maple syrup or fruit concentrate 1/3 cup natural light oil 2/3 tsp. sea salt Optional: 1 tsp. cinnamon or allspice or 2 Tbsp. carob powder Optional: 1/2 - 1 cup dried fruit Preheat the oven to 350 degrees F. Mix all the ingredients together carefully with a fork. Spread the mixture evenly on a lightly oiled, large, flat baking pan. Bake for about 25 minutes, stirring or turning the mixture completely every 8 - 10 mionutes until lightly browned. Add dried fruit and allow the mixture to cool and harden 1 hour before storing. Store in a sealed container for up to 3 weeks at room temperature, or refrigerate.
