Guest guest Posted November 5, 2002 Report Share Posted November 5, 2002 Celery Salad Source: Cooking Light Nove 02/adapted to vegan 3/4 cup sliced celery 1/3 cup dried sweet cherries 1/3 cup frozen green peas, thawed 3 Tbsp. chopped fresh parsley 1 1/2 Tbsp. Veganaise 1 1/2 Tbsp. soy yogurt 1 Tbsp. chopped pecans, toasted 1 1/2 tsp. fresh lemon juice 1/8 tsp. salt Combine all ingredients; chill. NOTES : A cool, crisp salad adds crunch and contrast to the menu.
