Killer Peanut Butter Fudge Cookies

Greetings,

 

In this months special Christmas issue of Veggie Life magazine, there is a

recipe for PB Fudge cookies. I modified it for GF, and baked them up last

weekend. They turned out scrumptious! BTW, if you're looking for holiday

cooking ideas, check out the Veggie Life Christmas issue. They have lots of

ideas for special holiday foods, and many of the recipes are already GF, or

can be modified, (some of the baked goods, of course, will need quite a bit

of modification).

 

 

Killer Peanut Butter Fudge Cookies

 

1 cup sugar

1 cup brown sugar

1 cup peanut butter

6 Tablespoons oil (I used less, and added some water to make up the

difference)

egg substitute for 2 eggs

1 Tablespoon vanilla

2/3 cup cocoa

1/2 cup amaranth flour

1/2 cup millet flour

1/2 teaspoon salt

1 teaspoon baking soda

 

Preheat oven to 350, and line a baking sheet with parchment. In a mixing

bowl, cream sugars, peanut butter, and oil. (This very thick mixture almost

burned out my hand mixer! I used a wooden spoon to finish mixing the

ingredients. I think next time I will cream the sugars, egg substitute,

vanilla and oil, then add the PB and mix by hand). Add egg substitute and

vanilla. Mix well. In another bowl, combine flour, cocoa, soda and salt.

Add to sugar mixture, kneading with the back of a wooden spoon to moisten all

ingredients. Dough will be stiff and crumbly.

 

Using a scoop or by hand (I used a 1 Tablespoon measuring spoon), form dough

into balls and place them on a prepared sheet, about 3 inches apart. Flatten

balls to make thick, round disc shapes (I used the tines of a fork to make

the traditional criss-cross marks of a PB cookie). Bake for 8 or 9 minutes,

until barely brown. Cool for 2 minutes on baking sheet before removing to a

wire rack. Cool completely and store in a covered container, or freeze.

These cookies seem to freeze very well. Mine have been in the freezer for

several weeks now, and still taste great!
