Guest guest Posted November 1, 2002 Report Share Posted November 1, 2002 HARVEST POTATO SOUP 1 Tablespoon margarine 1 medium to large onion, chopped 1/2 cup chopped green onion 4 cups chicken-style broth 3 cups peeled and diced potatoes 2 medium carrots, peeled and thinly sliced 1 cup thinly sliced zucchini 3 cups finely shredded spinach Salt to taste Melt margarine in a large saucepan. Add onions, cover and cook over low heat about 5 minutes. Add broth, potatoes and carrots. Cover and simmer 15 minutes. Add zucchini and simmer 5 minutes. Add spinach and salt to taste. Heat thoroughly.
